Can I freeze citrus rinds for a couple weeks to make candied citrus peels?

I just got a box of blood oranges and wanted to make candied citrus peels to serve at Christmas. Will the rinds hold up in the freezer for a couple weeks? Should I prep them first? Any tips to keep them from drying out?

  1. They should be ok if you prep them fisrt just make sue there is no air in the bag and use them promptly.
  2. All you need to do is use petrulium jelly and or wax and then wrap in a newspaper. Coat them well. Then just rinse them off when you are ready to use them. We do this with whole lemons and oragnes we have growing in our yard. Nothing gets in including air and they are still in the same condition four months later when I use them.
  3. Actually let them dry for a few days, then put them in a freezer bag, then when candying them remove and allow to come to room temperature, then make you syrup, add them, I generally cut them in strips, once the sugar and water plus bit of corn syrup together, add the peel, and simmer until translucent, remove and roll in sugar or just place on waxed paper or parchment to dry, when set store in a air tight jar or even another freezer bag, you can keep them in a dry place for6 months.
