Dehydrating Citrus Peels?
What is the easiest and quickest way to dehydrate peels, such as lemon and orange, for preservation?

- Get a ziploc freezer bag and add granulated sugar (plain white sugar) then add citrus peel. Cover peels with more sugar and store in pantry. You can do this with fresh ginger too. The sugar draws the moisture from the peel as well as sweetening.
- Peel your citrus, being careful to exclude all the white, or pith from the peels. (the pith is very bitter). Spread peels on a cookie sheet, or other large shallow pan and place in the oven on the top rack on the lowest setting. The time will depend on the thickness of your peels, but it will take quite a while. After the first hour, check them every 20 to 30 minutes. Remove from oven when peels are completely dry and brittle. Allow to cool, and store in an airtight container for future use, or add to holiday potpourri or floral arrangements etc.
